The Fufú de Plátano (Cuban Mashed Plantain) is a classic of Cuban cuisine. According to Don Fernando Ortiz, the great Cuban folklore researcher, during the British domination in Cuba, the usual food of slaves was boiled and mashed plantain. British slavers used to say 'food, food, food' (food, food, food!), when rations were distributed to the slaves; hence they began to call him 'fu-fu'.

Ingredients:

  • 4 green plantains
  • 1 medium onion
  • ¼ cup vegetable oil
  • 4 cloves garlic, crushed
  • ¼ lb. Pork meat (a fat, boneless pork chop with the fat on it works great) – sliced into super small pieces
  • Salt to taste
  • Juice of one lemon

Directions:

  1. Peel the plantains and cut into three pieces. Put them in a pot to boil with salt and lemon juice. When are tender turn off the heat and keep them in the water until prepare.
